Plant Name:
Carrot
Latin Name:
Daucus carota sativus
Plant Type:
Weed
Edible Part:
Root
About
Carrot greens are high in protein and oxalic acid and should be avoided. The root is a good source of vitamins A, K, and C, but its calcium to phoshporus ratio is <1 : 1, so it is not a good source of calcium. The root also has slightly elevated levels of sugar, so it should be fed sparingly, if at all.
Do not confuse with Wild Carrot, which is a different subspecies; Daucus carota carota, and is toxic.
